If you are following blog and / or vlog; you know that I love to evaluate everything and store as long as I can. To dry fruits and vegetables is the best way to store them also this extends the lifetime of them.
On the rural part of Montenegro, we have a lot persimmon trees but mostly they don't consume that much. For me; that is a heavenly fruit.
When persimmons started to turn to orange from green colour; is the best time to collect them for drying process. When you are collecting them from tree; try to keep the top part as a T, then you can use this T to tight them to hang. First you have to peel them and tight. The most important part is they shouldn't touch each other.
Boil some water (you can add some cinnamon to the water for extra taste also protection from bugs) Dip persimmons (with rope) 10-15 seconds into the boiling water.
Now they are ready to hang to dry. This period will take approximately 30 days. As an advise; take them inside during the nights (due to temperature change) to avoid humidity on them. Otherwise they will be rotten very easily. Every morning to outside, every evening to inside. If any rain, something like that; even you can hang infront of heater.
This is how they look like after 15 days of process.
